Add a way to rewrite proxy names

I accidentally found external-policy-name-prefix which is great, for fixing airports that have overlapping proxy names, but what about being able to rename proxies? Is there anything like that supported?

E.g. my airport uses chinese 香港 and I want to change it to Hong Kong without having to write some parser...

I appreciate this @Daniel_ZHAO - but I've tried substore before with Stash and I thought the app was pretty low quality and difficult to use. I would prefer a surge native way!
